Cooking Challenge
Food is a universal language. It is a way of wordlessly sharing our culture, history, geography, and lives with each other. The ingredients we use reflect the plants and animals that thrive around us and preparing family recipes keep us grounded in our heritage. This is true most everywhere, including the nations explored in this course. This challenge is to embark on your own culinary adventure into the world of Middle Eastern cuisine by preparing (and documenting) one of the dishes listed below. Make sure to take a picture or video of your foodie adventure to share with the class on the discussion board. Selfies are greatly encouraged, but not required.

Notes on provided recipes:
These dishes are either popular across the entire region (e.g. hummus) or famous from one or two specific places (e.g. tagines from Morocco), and were selected to provide a variety of options re: tastes, budgets, and cooking skill levels.
The linked recipes were chosen for their ease, authenticity, and the presentation of the history and backgrounds of the dishes. That said, if you have special dietary restrictions or preferences and want to find a different recipe, that’s totally fine—just be sure to include a link to the recipe in your final submission.
